I was a bit surprised when I discovered that what people in England call "marmalade" has nothing to do with my country's marmelada, and it made me feel a little nostálgica about it. I wrote to my Papá asking for some marmelada, but for some reason he sent me the fruit used on it, which we call marmelo but my dictionary says it's called quince here. I don't know how Papá got it wrong, but well. If life gives you marmelos you make marmelada. And that's what I'm going to do.
The finished result will be brown and thicker than the English marmalade, and you cut it in little squares and eat it. I'll be sharing it with my team and with anyone who wants to see how it's done too. Any volunteers?
